my first test was the one egg omelette. on the scorcher burner set on high. first surprise, it takes longer to heat up than most pans. a good sign for more involved recipes. i applied a very lite coat of butter. then the egg. like i said the pan was not as hot as i anticipated so the egg spread around more than usual. cheese and chives. a quick shake. perfect. well any new non stick should do that. we'll see in 2013.
strip mall asian grocery stores are my usual source for cheap, disposable non-stick pans. if they last a year they did their job. why pay more?
