ramen with smoked pork belly
or lunch prepared in less time than you can eat it. well, not counting smoking...
...the pork belly. that happened yesterday. pork belly is kind of a rarity for supermarkets round these parts. so when they pop up on the shelf i buy a few and freeze them. since they seem to like a brine soak i thaw them in the brine.
apres brine the pork is ready for smoking. but this time i added a dry rub of brown sugar, pepper, johnny's, oregano, and hot chipotle chili powder.
that chipotle chili is an ass kicker so i had my doubts on whether this smoked belly would be a good match for ramen. turns out the hoisin brings it all together really well, particularly when you get a spoonful with a korean mint leaf. mmm
