or lunch prepared in less time than you can eat it. well, not counting smoking... ...the pork belly. that happened yesterday. pork belly is kind of a rarity for supermarkets round these parts. so when they pop up on the shelf i buy a few and freeze them. since they seem to like a brine soak i thaw them in the brine. apres brine the pork is ready for smoking. but this time i added a dry rub of brown sugar, pepper, johnny's, oregano, and hot chipotle chili powder. that chipotle chili is an ass kicker so i had my doubts on whether this smoked belly would be a good match for ramen. turns out the hoisin brings it all together really well, particularly when you get a spoonful with a korean mint leaf. mmm
