to serve i like to put meaty bits into a pot just big enough to accommodate the meat and several cups broth. how much broth is a judgement call. warm over low heat while you cook up your favorite rice noodles. or you can cheat and cook somen noodles directly in the meat/broth pot. serve with plenty of thai basil, hot pepper, hoisin.
this combo rocks the house. the shanks and bones are the ticket to a beefy... ...deluxe broth. all the meaty stuff goes into a stock pot w/ enough water to cover the bones. bring to just barely a boil and back off to simmer, skimming off foam. season with charred ginger/onion, toasted star anise/clove/cinnamon stick, sugar/salt, fish sauce, habanero is optional). simmer for about 2 hours. liberate meat/marrow/soft tissue from bones. give bones to dogs. strain broth. get meat and broth to roughly room temp then refrigerate separately until you can fork off the fat from the broth.

Seriously? No one's left a comment on how awesome this post is. I stumbled on to your blog after stumbling upon the akal teke breed online and following random links to your stable page. I'm a cook and horse lover. Kudos on pho at home and kudos on the fabulous barn. If I had to be stranded on an island, it would definitely be this one!
