over the past few decades the fish marketing has gotten much fancier with the fillet being the dominant cut and copper river salmon fillets going for over $20/lb. salmon steaks pretty much vanished. have you filleted a fish? well it's not rocket science but it's pretty fucking hard to do it and have the pristine perfect looking fillet you see at the local fish mongers. cutting steaks is a no-brainer.
for salmon steaks you just put the fish horizontally on the cutting surface and make vertical cuts from head to tail. 1.5-2 inch wide or to taste. easy and fast.
