then why am i making it? well it popped up on twitter, i looked it over briefly and thought 'that shit sounds good!' savory custard tart topped with a crab ceviche. yes! i won't go into all the details and maybe some folks will have success with this recipe. but the first glaring mistake is 4 egg yolks and 3 cups cream don't just reduce to 1 cup in any where close to the allotted time (if at all). maybe i'm an idiot but it's just one of those 'over-the top' recipes where you trash the kitchen with bowls of this and that. and then they call for steaming the tart? whateva. i got to the point where the custard tarts are steamed and said 'fuck it.' done for the day (yesterday).
