jack and peppers
here's a twitter inspired simple classic from chow. you can check it out here. chow's great for those who don't want to fuss too much with over the top preparation, like this one from momofuko (i'm goddam sure these wings are awesome). but...
...me not getting that elaborate. i have fried many a sandwich and my technique's a bit different than most. i apply a very light application of mayo on the inside of both bread slices. add a layer of jack cheese (ah yes tillamook if possible), sprinkle with chopped jalapeno, then another layer of jack. heat a small non-stick pan, add a tiny sliver of butter-just enough to make pan shine. fry covered over medium low until browned to taste. remove from pan. flip. add another butter shaving to pan. fry other side of sandwich covered on low until well melted.
