 this is a unlikely combo that we're hooked on. and i don't mean in a bowl with milk for breakfast...

here it's fish taco night, but fishing season is just getting going and the freezer is empty. so it's shrimp taco night instead. either one benefits from a dip in my secret egg sauce, a coat of panko/capncrunch (@3:1), and a quick fry. the capncrunch needs a few quick pulses in a blender first or the results might be very silly.

secret egg sauce is a couple eggs beaten together with a big dollup mayo, pinch onion powder, salt/pepper. i skip the usual dredge in flour first routine. initially i tried this out of laziness. then i discovered the flour kind of helps it all glue together. but with shrimp i like bits of panko/capncrnch/egg sauce falling off and browning on their own, revealing little glimpses of the pink hued shrimpies.

we assemble our fav taco condiments, cabbage, avocado, scallions, radish, corn (sometimes). lay the first round of tortillas on a roasting pan, top with some shrimps and bits, sprinkle with cheese and scallions (a little smashed garlic is good too), and warm under a broiler. add condiments. a little sauce that works well bringing it all together is salsa with some mayo and rooster sauce.

so what makes capncrunch work so well with panko? 4 things come to mind. texture, color, flavor, sweetness. not necessarily in that order. try going half and half and its sweetness, color, flavor, texture. i'm not going to try this with fruit loops or grape nuts. the chemists just came up with a charming cereal umami thing when they devised capncrunch.
