the boys destroyed the pork.
my son and i came to a easy consensus on what to make for his team dinner. pulled pork sandwiches. for 16 boys and 4-5 adults. my legacy of making too... ...much food goes back decades. i poked fun of myself driving back from the grocery with 3 buttroasts in the 6-8 pound range, two heads of cabbage, 6 eight packs of soft white burger buns, 2 half racks of mountain dew, 2 bottles barby sauce, and a 12 pack of Stella. who needs dessert when you've got pork galore? (actually one parent brought a cooler full of dry ice, ice cream sandwiches and Klondikes. nice!) pulled pork sandwiches benefit from a simple slaw of salt, sugar(lots), vinegar and at least 24 in the fridge. i serve mayo as a naughty optional side that goes on the warmed buns before assembling the sandwich. where my son i part paths is the treatment of the pulled pork itself. barby sauce mixed in or not? he prefers the pork as is with a squeeze of sauce on the slaw. i like pork/sauce mixed. easy solution is two bowls of both.
