i made this quick dish last night and decided it would most likely get me past first base for an evening. saute some smashed garlic in oil until just browned and remove from pan. saute sliced red pepper until soft, add garlic and 1 can cannellini bean. simmer low heat. puree a second can cannellini's in a blender with the juice of a lemon. add to simmering beans. add a cube of rapunzel vegan veggie stock (unsalted if beans are salted). add a handful chopped fresh fennel (or parsley, tarragon?) and serve over pasta (or rice, quinoa?).
if being vegan was like getting to second in a baseball game... ...i wouldn't even be in the ballpark. which is too bad because is seems like a diet that makes perfect sense from a health perspective. almost all the naughty bits are off limits. i just don't have the discipline.
