my tamale addiction goes back to a central american hitch hiking trip way back when...

spent about a month criss-crossing mexico eating mostly street food. the tamale and the torta being my fav's. delicious regional variations. it had been a few years since forgetting about my temporary crown on one of my left lower molars. i thumbed my way down to Belize, a country that bares little resemblance to Mexico. take your typical chicken tamale. all variations on that theme in mexico featured shredded chicken, diced chicken, chicken chunks.

well in Belize i discovered they'll just put a whole drumstick in a tamale. mmm, but ouch that shit can wreak havoc if.... thankfully i bit the bone on the right side of my mouth and did no hardware damage.

the garibaldi tamale doesn't really resemble it's central american counterpart but it holds it's own. it comes frozen. so yeah it's pretty convenient and tasty. but you have to steam it for 45 minutes. nuking is an option but steaming is recommended.

Beware of Garibaldi tamales if you're on a sodium restricted diet; they're a
stroke waiting to happen. The US recommended daily intake of sodium is 2500 mg; a sodium restricted diet is usally around 2000 Now,consider their beef tamale; they classify. 1/2 tamale a "serving," and that has a total of 2160 mg. sodium, Supposing you eat both halves (as most people can easily do) =- that's 4320 mg sodium. 173% higher of the US RDI and 216% of a 2000 mg./day sodium restrcted
diet.

Upshot: A younf person in good health should have no problems with them, I wouldn't advise feeding one to your old ma.

you will need specific mexican seasoning, corn husks and a mexican market to buy the masa that is in the refer dept.. are you able to find mexican markets where you live..?

Ok Darryl here you go. Go to a market and buy pre made masa. corn husks, mix water and chicken soup base to masa. soak husk in water clean and drain, husks are easier to use if soft. spread moistened smooth masa onto the center area of husks , set aside .
sauce , fiesta spices are rubi paprika, salt , beef soup base , mexicali chili pepper , garlic powder, cumin, mexican oregano, cayanne, water and starch , canola oil ( or lard which we stopped using for selling purposes ) or substute and oil for your dietary needs , you could use a great olive oil.. and flour.
1. make a Roux on the stove with the flour and oil
2.add the mixed spices in water and add to roux
3. add starch and water..
you can tasted the sauce and add more or less spices and you desire.. I usually add more
cook over meduim heat for 30 min until all flavors are blended
( you could also add small sauted sweet onion to the sauce. this makes if even better.
cool in refer , you can remove the top hardened skin or just mix by hand before you assemble the tamales
have a large steam pot on hand they will steam for 45 min after you make them , freeze and re stream 45 min for future use
we used boiled turkey breast ( this was also my favorite ) cut into 1x1 - 2x2 pieces, you can substitute any cooked meat , like a nice moist beef chuck, chicken tenders or a chicken breast, also cut in large pieces. take 2 corn husks alternating the ends , place cooked meat , then sauce, add alternating husks on top , roll in parchment paper , squeeze ends so to keep sauce inside. use cooking twine and tie off ends with knots .so when cooked sauce stays inside , trim excess twine and paper , so you have a clean edge, about 1.5 inches beyound what you tied off. place all tamales in steamer with lid adding water as needed.. 45 min , freeze once they cooled eat later , you can make double sauce and add hot sauce on top of tamales , this is what we did in the Golden West Resturant in Oakland.we also made beef tamales with polenta and cocktail tamales.. make sure you keep good notes so you can change anything going forward.. Just returned from Fred Meyers (on Division) and a gentleman worker there said that they were discontinued and he didn't know where in Spokane they are being sold boohoo! The Turkey Tamales were delicious! If you should happen upon them please let me know! I think I will try the Grocery Outlet on Division and Lincoln.

I did find them in the only grocery store in Amboy Wa, but on my last trip there they had just quit selling them for no reason that I could figure. I sure miss them, and look forward to finding a place here in the Portland Area.where they might have them.
