Where'd it go? We gobbled it up tout suite. Here's the link to the recipe. My version doesn't require a food processor or microwave oven... I started with a cauliflower the size of a grapefruit, cored it and then grated it with my Kitchenaid mixer's finest shredder attachment. I believe the finest cheese grater would accomplish the same effect...you want 2-3 cups of couscous like cauli-product. Then spread it out onto a baking tray and dry it out in the oven, bottom rack @500' or broil for 10-15 minutes (don't brown it). Remove and place cauliflower in a mixing bowl, allow to cool 5-10 minutes, add a generous half cup of your fav grated cheese(s), one egg, and a pinch or so various dried herb, like chive/basil/oregano/whateva. Mix it all into what we're calling 'pizza dough'! Spread it out onto parchment lined baking pan and back in that 500' oven until slightly browned. Remove and add your typical pizza toppings and bake again until it looks like pizza. I topped w/ this canned shit from Trader Joe's and it was a success, though my wife found it a tad salty (as usual). * I'm talking about the canned eggplant stuff, though coconut cream with shrimp chips might work????
